Abstract
Aspects covered in this review include: work done in India on microbiology and preservation of fresh fish and preparation of different products from fish, including waste utilization; preservation methods for meat, various products prepared from it and modernization of slaughterhouses; processing of poultry, and the various products obtained therefrom; and preservation and processing of eggs.
