Abstract

As part of a survey to collect information on the climatic conditions, cultural practices and yields from orange orchards in the Coorg district of Karnataka, it was established that total soluble solids (TSS) in the fruits from different orchards varied from 10.0 to 12.5%, total sugars from 8.0 to 9.0%, total acidity from 0.37 to 0.65% and TSS/acid ratio from 17.2 to 28.0. The wide range of variation in the TSS/acid ratios on acidities indicates that the TSS/acid ratio may not be a suitable criterion for establishing the maturity of the fruit; on the other hand, TSS alone is a reliable index for fixing the optimum maturity. No significant differences in chemical composition were observed between fruits harvested from different positions on the same tree.
