Abstract

7 var. of rice containing chalky kernels (CK) were soaked in water at room temp. to determine the equilibrium moisture content (EMC). In 5 of 7 var. tested, CK absorbed more water than translucent kernels. Inter-varietal differences in EMC were maintained even among fully translucent or fully CK samples.
