Abstract
Histochemical study of rice grain indicated that the bulk of the lipase activity was present in the testa layer in both raw and parboiled rice and to a smaller extent in the pericarp layers. The oil was distributed in the aleurone and in the testa and bran layers to some extent. It is concluded that since the lipid and the lipase are spatially distributed in aleurone and testa layers resp. in intact rice grain, there is more stability of the oil in the intact rice grain.
