Abstract

Bengal gram (Cicer arietinum) and red gram (Cajanus cajan) infested by the pulse beetle (Callosobruchus chinensis) were stored for 5 months and analysed at regular intervals. During this period, the uric acid and frass contents in Bengal gram increased from 18 to 211 mg/100 g and from 0 to 2.3% while in red gram they increased from 16 to 205 mg/100 g and from 0 to 1.2% respectively. Significant decreases were observed in the thiamin and threonine contents of both pulses, and also in the lysine content of red gram. The protein efficiency ratio of Bengal gram fell from 1.8 to 1.16 during the storage period, while that of red gram fell from 1.23 to 0.68.
