Abstract

The available information on manufacture and quality control of tomato products is reviewed under the following headings: (i) harvesting, storage, grading, packing, transportation; (ii) composition and nutritive value; (iii) preparation for processing (washing, sorting and trimming, grading); (iv) tomato products - canned tomato, tomato juice, pulp and puree, paste, ketchup, soup, cocktail, powder, dehydrated tomato, chili sauce, utilization of waste; (v) changes during processing and storage; (vi) quality control; (vii) analytical methods including microbiological aspects).
