Abstract

Examination of the acidic amino acids and acidic peptide fraction of mature peanuts revealed the presence of greater than6 ninhydrin-positive components in addition to substantial amounts of glutamic and aspartic acids. The major acidic peptides were identified as gamma-glutamyl-L-phenylalanine, gamma-glutamyl-L-tyrosine and gamma-glutamyl-glycine.
