Abstract

The data presented in this communication show that nearly 60% of the total toxin present in groundnut cake flour is associated with the protein; thus preparation of protein isolate from groundnut cake flour for human consumption results in concn. of the toxin. The health hazards of even very low levels of the toxin and the need for a process for the total elimination of aflatoxin are stressed. It is suggested that a detoxification step involving oxidation of the toxin with H2O2 be incorporated in the processing line for the preparation of protein isolate.
