Abstract
New red pigments developed in banana skins as a result of UV exposure, were characterized as anthocyanins by chromatographic behaviour, colour and spectral characteristics, and as 3-desoxyanthocyanidins on the basis of Rf (paper chromatography, formic acid and Forestal solvents), colour and stability.
