Abstract

Laboratory and pilot plant investigations of the dehydration of eggs were carried out. Eggs were washed, broken, churned and filtered. Yeast (0.5% for 90 min/36 degree C) was used to remove sugars by anaerobic fermentation. The liquid egg was pasteurized (61 degree C for 30 min), cooled to 8 degree C and stabilized by addition of N HCl, reducing pH to 5.5. Initial dehydration was by spray-drying to 4-5% moisture, followed by vacuum tray drying to reduce moisture content to less than 2%. Sodium bicarbonate was added to the powder, to adjust pH to 8.5 on reconstitution. Analysis of egg powder from the pilot plant gave the following ranges of results: moisture, 1.00-1.30%; fat, 38.50-40.10%; ash, 3.54-3.60%; Ca, 201-225 mg%; P, 760.800 mg%; Fe, 15.60-20.10 mg%; N, 7.96-8.13%; protein, 53.18-54.31%; soluble N, 7.06-7.55%; solubility 86.94-92.85%; glucose 0.09-0.19%. Organoleptic testing showed products (scrambled eggs, omelettes) made from the powder to be acceptable. Bacterial count of 4 samples was less than 50 000/g. Coliforms and Salmonellae were absent from the powder although found in all the raw egg samples.
