Abstract

Effects of 4 different composite coating formulations based on polysaccharides were assessed for maintaining quality and extending shelf life of bananas and mangoes at 27 2C. Fruits coated with formulations based on chitosan, N,O-carboxymethyl chitosan, carboxymethyl derivatives of cellulose and starch, or hydroxymethyl and hydroxypropyl starch were compared with commercial Waxol-coated and uncoated fruits. The experimental coating materials were blended with suitable lipid components and wetting agents. Quality parameters measured for fruits included firmness, TSS and titratable acidity. Physiological parameters measured were CO2 evolved and wt. loss due to respiration and transpiration. Fruits treated with polysaccharide-based coatings displayed slower colour development, lower acidity and greater firmness values than Waxol-coated and control fruits. CO2 evolution and loss in wt. were also reduced significantly by use of the experimental coating. Data were subjected to principal components analysis to differentiate the characteristics of the films. Chitosan-based coatings were much superior in prolonging shelf life and quality of bananas and mangoes than the other polysaccharide-based coatings.
