Abstract
The vegetable oil industry in India is discussed, with particular regard to its adoption of process control systems in the 4 basic categories of operations/plants involved, i.e. preparatory and precleaning sections; expeller plants; solvent extraction plants; and refineries and hydrogenation plants. On-line instrumentation for these operations, and its functions, are outlined.
