Abstract
Substrate (wheat bran) degradation during Aspergillus niger CFTRI 1105 solid state fermentation for glycosidase enzymes was studied. Changes in substrate wt. and variations in the microscopic appearance of particles were made during fermentation. Release of extracellular glycosidases, including alpha-amylases, cellulases, xylan endo-1,3-beta-xylosidases, and glucan 1,4-alpha-glucosidases was recorded at different fermentation times. Max. reduction in size and total wt. of substrate particles, and release of all major hydrolytic enzymes were observed after 36 h. A mathematical model for degradation of wheat bran particles during fermentation was developed; the model correlated with experimental results. [From En summ.]
