Abstract
Various aspects of breadmaking and additives employed are discussed, including: quality of Indian wheat; additives; flour improvers (e.g. bleaching agents); techniques (types of additives in bread, yeasts, water conditioners); fermentation aids (emulsifiers); surfactants; and antimicrobial agents.
