Abstract

The protein quality of chickpea (Cicer arietinum) and green gram (Phaseolus aureus) ungerminated (UG) and germinated (G) was evaluated in terms of their ability to regenerate liver enzymes, liver proteins and serum proteins in protein-depleted rats. Male Wistar rats weighing 65 to 70 g were deprived of protein for 10 days. The activities of succinate dehydrogenase (SDH), alanine aminotransferase (AAT) and amount of liver glutathione decreased and alkaline phosphatase (APase) increased during depletion. After a repletion period of 10 or 28 days, liver protein repletion was better when legume fractions rather than whole legume diets were given. Germination did not improve the regeneration capacity of the legumes which suggests amino acid pattern is not much affected during the early stages of germination. SDH and AAT activity increased to normal in groups given whole legumes. APase and glutathione were not restored even after 28 days. The tissue-regenerating capacity of chickpea (UG and G) was better than that of green gram in terms of gain and liver and serum proteins. Regeneration capacity of protein concentrates was poor, probably due to low palatability or destruction of some essential amino acids during the preparation of the protein concentrates.
