Abstract

After 4 weeks on a diet high in cholesterol male Wistar rats weighing about 150 g were given diets with ungerminated or germinated chickpea (Cicer arietinum) 575 or green gram (Phaseolus aureus) 500 g/kg without or with cholesterol and bile acids 0.5% for a further 4 weeks. All the groups given chickpea or green gram had less cholesterol in serum and liver than rats on the diet high in cholesterol without legumes throughout. Germinated legumes were more effective than ungerminated in decreasing cholesterol. Rats given legumes excreted more bile acid than those given the diet high in cholesterol without legumes. Rats with increased cholesterol in serum and liver had decreased activity of succinic dehydrogenase, transferases and glucose-6-phosphatase in liver.
