Additional Information: | <p align="justify">Raw banana, banana flower and banana stem are used as vegetables in preparation of various dishes and snacks. Traditionally these are known to have medicinal value and are known to be beneficial in the management of diabetes. The present study was aimed to study the nature of carbohydrates and dietary fiber profile. The results of this project work indicated that method used for isolation of dietary fiber from raw banana, banana flower and stem is suited to obtain crude fiber with a simple method. The soluble dietary fiber present in raw banana, banana flower and banana stem is much less than that of insoluble dietary fiber. Sugars present in raw banana, banana flower and stem are rhamnose, arabinose, xylose, mannose and glucose.</p> |
