Additional Information: Various fruit and vegetable sources were screened for peroxidase enzyme. The fruits used were musk melon, grapes, and sapota and the vegetables screened were carrot, beet root, tomato, onion, bottle gourd and brinjal. From various fruits and vegetable sources screned, musk melon peel was found to be rich source of peroxidase enzyme. Among the other fruits and vegetables examined, the peel portions shown higher activity than the other parts. The higher peroxidase activity helps in protection of tissues from peroxides and maintains the fruits and vegetables healthy. Partial purification was taken up and determination of optimum pH, temperature stability and enzyme kinetics for musk melon peel POD.
