Abstract
Peda, an Indian milk based sweet, has a short shelf life of maximum 15 days. Large scale marketability of peda and its export promotion requires a longer shelf life. Therefore, it was aimed at increasing the shelf life to the maximum possible extent by packaging means. Storage studies carried out on peda in different packaging materials under different atmospheres revealed that the normal air packing with any barrier films did not extent the shelf life as compared to the unpacked ones. Vacuum packing, although retarded visible mould growth was found unsuitable as it affected the texture adversely. Usage of free oxygen absorber was found to be highly beneficial in extending the shelf life of peda more than 42 days.
