Abstract
The time required for drying any commodity
depends upon the amount of moisture to be
removed from it and the rate of its removal.
The less the time, the more it helps in providing
conditions which are favourable for rapid and
economical drying. Several factors like the
type of drier, nature of fruit, its variety, maturity,
thickness of pieces etc., affect the drying rate.
These have been studied in the case of banana,
nineapple, papaya and mango.
