Abstract
Sugarcane juice is a natural beverage which is delicious and cheap. The juice has a high demand
among consumers. At present, sugarcanes are crushed in a non-hygienic manner by the hawkers
and the juice offered to the consumers is quite unsafe in view of heavy load of microbial
contamination. Experiments were carried out to reduce the microbial load by exposing canes,
juice, and both cane & juice by Ultra-Violet (UV) treatment.
