| Additional Information: | <p align="justify">Colours from different sources such as plants, animals, and minerals was known to ancient civilization and valued for medicine, aesthetic value etc. Monascus purpureus produces polyketides pigments by solid-state fermentation using rice as a substrate. The colour ranging from red, orange, yellow divided into three groups. Rubropunctatin and monascorubrin (Orange pigment) rubropunctamine and monascorubromine (Red pigment), monascin and ankaflavin (Yellow pigment) were obtained on measurement of polyketide pigments absorbance.Experiment carried on antimicrobial study by agar diffusion disc method indicated the inhibitory action of total pigment against different food borne pathogenic bacteria such as E.coli, Bacillus cereus, Staphylococci sp, Streptococci, Yersinia enterolytica, Listeria monocytogenes.Polyketides of Monascus purpureus indicates that the intensity of biological activity to bacteria is fairly less than fungal sp. The pigment showed antimicrobial activity against all the six test organisms with potency in decreasing order to E.coli, Streptococci, Listeria, B.cereus, Staphylococci, and Yersenia.</p> |
