Abstract
Melon seed kernels are a rich source of protein and fat
and are commonly used as adjuncts in sweet/snack foods.
The seeds are manually dehulled to get kernels. This operation
is very tedious and laborious limiting the capacity
to only l00g/pεrson/day. The various physical characteristics
of melon seeds, were evaluated in order to find out the
possibility of mechanically dehulling them.
