Abstract
Parboiled rice behaved fundamentally differently from row rice in its response to the alkali degradation test, in that it was
rapidly degraded by such dilute alkali in which raw rice remained totally unaffected. Moreover, the extent of degradation
was directly proportional to the severity of parboiling; and the reaction was essentially completed in 1 h. This reaction,
therefore, gave an excellent and instant test for parboiled rice as well as for the degree of parboiling. In moderate or
concentrated alkali. on the other hand, reaction of raw and parboiled rice was largely similar.
