Abstract

The influence of raw, partially and com.pletely
processed soybean on (i) weight of pancreas, and
(ii) tryptic activity of the feces of albino rats was investigated.
The weight of the pancreas per 100 g body
weight of rats increased with the tryptic inhibitor content
of the soybean in the diet. The total tryptic activity
of the feces of rats fed raw soybean was significantly
higher than that of the feces of rats fed processed
soybean diet. The tryptic activity of the feceS showed
a relationship, not strictly proportional, wIth the inhibitor activity.
