Abstract
38 species of cultivated and wild plants available around Lucknow were investigated for leaf protein
extraction. Fresh leaves were processed in the laboratory and the percentages of total nitrogen and protein
nitrogen extracted were determined. Samples of crude protein were also prepared and analysed for nitrogen
content. The results of some suitable species are presented according to the extractability of protein N. The
cucurbits and legumes gave good extraction and yielded a crude product with high N content, the former
generally yielding a better product than the latter. Some of the wild species were also found to be good
sources of protein.
