Abstract
Forty samples of Anardana (sun-dried seeds of ripe sour pomegranate) comprising authentic as well as commercial market samples, were analysed for their important physico-chemical characteristics. The range of values was moisture 5.4-14.7%, acidity 7.8-15.4%, total ash 2Jt4-4.04%, acid insoluble asb 0.73-1.98%. crude fibre 22-30% and protein (NX6.25) .4.74-6.25Y... Variation in colour was also noticed. Quality standards bave been proposed for the product• . Sorption studies indicated that an initial moisture content of 8.7% exerts an ERR of 6ZY... Storage studies over a period of 9 months revealed that friction-top tins were the best followed by glass containers. In 200 gauge polythene bags,there was loss of moisture during summer months which was regained during rainy season. Darkening in storage was the least in friction-top tins.
