Abstract
Distribution of pigments and N during preparation of lucerne leaf protein concentrate (LPC) by different methods was studied. Solvents precipitated more N than either heat or acid, in the order acetone greater than isopropanol greater than ethanol. Residual pigment concn. in solvent precipitated LPC also varied, with acetone-LPC having the lowest amounts and ethanol-LPC the highest.
