Abstract
Chemical composition of the green bean was estimated. Moisture, protein, fat, total carbohydrate, ash, crude fibre and neutral detergent fibre in the whole bean were, resp. (g/100 g) 6.4, 25.1, 1.3, 62.0, 3.6, 8.7 and 14.5; the bean was 81% cotyledon and 19% testa (dry wt. basis). Cotyledon contained most of the protein (30.1 g/100 g) and testa most of the crude fibre (43.4 g/100 g) and neutral detergent fibre (45.5 g/100 g). Physiological effects of feeding green field beans to rats were also determined.
