Abstract

Ungerminated and germinated green gram (Phaseolus aureus) or chick pea (Cicer arietinum) was included in the diet of groups of broiler chickens, the control having no legume content in the feed. After 10 wk, 6 birds of each group were slaughtered and their dressed wt., giblet wt., breast angle and keel length were measured, all of which showed best results in birds on green gram diet. Light and dark meat of each was evaluated organoleptically, and the results were evaluated statistically by the Chi-2 test. Texture, tenderness and flavour of meat from birds on legume diets were significantly (P less than 0.5 and 0.01) better than in the controls; germination of the legumes was unimportant.
