Abstract
A process for incorporating fish protein concentrates (FPC) with cassava (Manihot utillissima) flour was investigated. The cassava flour was mixed with different proportions of FPC to form a highly nutritious wafer. Various steps involved include bleaching the flour with H2O2 prior to processing to yield a product with the desired appearance. A shrimp flavoured wafer was also produced; both wafers are intended for combating malnutrition in populations subsisting on the cassava tuber. [See FSTA (1971) 3 2R38 for part XI.]
