Abstract
Use of extruders as bioreactors in the field of biotechnology is described. Twin screw extruders are being used for such applications as they can provide the necessary characteristics of continuous processing, mixing, temp. control, venting facilities and the ability to handle highly viscous materials. Major applications of the extruder as a bioreactor include: derivation of starch; pre-cooking of starch with specific paste viscosity; production of flavour precursors; modification of gums; production of sodium caseinate; ethanol production; hydrolysis of cellulosic materials; and conversion of lactose to lactulose. Aspects considered include: bioconversions through extrusion; enzymic liquefaction of starch (saccharification, modification); continuous extrusion pretreatment of cereal flour for subsequent ethanol fermentation; and application of enzymes in food extrusion processes (use of enzymes prior to extrusion, use of enzymes during extrusion, use of enzymes after extrusion).
