Additional Information: Dehydration of foods is knows as preservation technique since ancient times. Dehydration has evolved in to a scientific and with rapid development in the drying technologies. The advent of new dehydration technologies and their effect on the processing of difficult fruits and vegetables have been reviewed in the present dissertation. The methods of dehydration significantly affected the quality characteristic of fruits and vegetables. The nutrients retention in processing fruits and vegetables using solar drying, advantages and disadvantages of solar drying are also discussed.
