Additional Information: | The poultry sector produces waste during processing especially in the form of viscera. This may contain various types of microorganisms which may be beneficial or harmful. The proteolytic bacteria which may be endopeptidases or exopeptidases degrades proteins at an optimum environmental conditions which find beneficial in many leather, detergents, food and pharmaceutical industries. The study was carried out to isolate and characterize the proteolytic bacteria from the viscera. Further, this study was carried out to isolate and characterize the proteolytic LAB from chicken viscera. The study included enumeration of LAB count in chicken waste. The isolated proteolytic LAB from chicken viscera was identified by biochemical tests and they were used for fermentation of chicken viscera. |
