Additional Information: | Fermentation using LAB can be an effective method for simultaneous recovery of lipids and protein from fresh water fish head. The oil/lipid recovered contained more amount of unsaturated fatty acids compared to saturated fatty acids which has medicinal, nutritive value in human health. The hydrolyzed protein showed antimicrobial activity. Broad spectrum inhibitory effect on Gram-positive and Gram-negative bacteria. The extracts also showed antifungal activity by delaying sporulation during the fungal growth. Thus, the protein hydrolysate can be used as a probiotic and suggests that they may have potential as novel active therapeutic agents. |
