Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: Focuses on the isolation of potent starter cultures, from dairy products along with the partial characterization of the bacteriocin. Based on various physiological tests like growth at different temperatures, high salt concentration, sugar fermentations it was tentatively identified that the strains belong to the genera Pediococcus. Similarly the plasmid curing of the isolates was done to determine that their antimicrobial activity was plasmid borne or not. Restriction digestion of 16S rRNA PCR product was carried out to confirm that the isolates are different or not, in which the two potent isolates from two different samples were selected. It was concluded that by means of differential band pattern, the antimicrobial activity of culture filtrate from the isolates was found to be effective against all the Listeria. spp,due to the presence of the potent antimicrobial peptide. This antimicrobial activity of the isolates was very effective when they are precipitated with ammonium sulphate. The molecular studies were carried out with 16S rRNA as a basic tool, where the target gene was amplified.
