Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information:
α-Glucosidase is an enzyme that catalyzes the final step in the digestive process of carbhohydrates. The α- glucosidase inhibitors could retard the use of dietary carbohydrates to suppress postprandial hyperglycemia. 24 cultures of α-glucosidase inhibitor from fungal sources were screened from forest soil. Finally A-14, cultures, which was later identified as Penicillium sp was selected for the inhibitor production from submerged fermentation. The availability of compound is found to be present in biomass not in the broth, however extraction process needs to be further modified to get the better yield.
