Additional Information: <p align="justify">Health benefits are one of the specific issues that will greatly influence the food industry in the next few years. Functional foods are product that may provide health benefit beyond the additional content of nutrients or through other added physiologically active components. Fruits and vegetables are increasingly being consumed because of their appreciated nutritional and fresh properties. The enrichment of these products with minerals, vitamins, or other physiologically active components can be a good choice to develop functional foods. This study evaluates the use of vacuum impregnation for developing nutritionally fortified dehydrated mango and banana slices. Mango slices and banana rings were immersed in hypertonic and isotonic solution (50% w/w or 20%w/w) respectively containing calcium salts. The vacuum impregnated pieces were further dried by different drying methods. Selection of suitable drying methods and condition to get a nutritional fortified dried fruit. Nutraceutical content and physicochemical properties of the fruits during the entire process.</p>
