Abstract

The present Indian Standard method for estimation of drained wt. of canned keema (minced meat) curry does not give accurate results, as there is loss of fine particles of meat during rinsings. A new approach, based on moisture and N content of the product, to test whether it conforms to specified drained wt. has been worked out. An equation based on moisture and N ratio has been suggested to test whether the product sample satisfies the drained wt. specification: y is not greater than mx + C, where m and C have been specified and x and y are experimentally determined values for nitrogen and moisture. In cases where y = mx + C the meat content is exactly correct as per specification, and if y = less than mx + C, the meat content is higher than specification.
