Abstract

The genetic and varietal basis of rice morphology, structure and texture of the grain in the improvement of technological qualities is reviewed. Aspects considered are: grain shape and size; husk morphology and structure; grain topography and bran layer; milling quality; grain chalkiness; grain notching; grain character; and shattering of grains.
