Abstract

The nitrogen solubility index of proteins from spray-dried Spirulina platensis was studied as a function of pH in the range 1-12 both in water only and in water containing concn. (0.1-1M) of sodium chloride. Max. solubility occurred in the pH range 8-10 in water and at pH 6.0
