Additional Information: In this study for real system, the effect of various process parameters such as type of osmotic agent, concentration and flow rate of osmotic agent, flow rate of feed and their effect on flux and anthocyanin pigment concentration are discussed. The influence of the process parameters, such as osmotic agent concentration (calcium chloride, sodium chloride) flow rate of feed and osmotic agent on transmembrane flux and anthocyanin pigment concentration was studied for real systems (Kokum extract) and it was found that more osmotic active osmotic agent having greater effect on the concentration of anthocyanin pigment. OMD can be apply as the pre-concentration step prior to relatively cost intensive process such as lypholization (freeze drying), in case of thermally sensitive product such as natural food color, biological material etc. the main advantage of OMD is that it enables to concentrate aqueous solution like fruit juices upto 70 °Brix without product damage. OMD like any other membrane process has low flux however its advantage over other that its ability to yield concentrates having superior product quality.
