Abstract
Phytosterols are a group of compounds derived from plants and are present in
all vegetable oils. Phytosterols content in edible vegetable oils ranged from
0.1-1.0%, and it constitutes a major part in the unsaponifiable matter (USM)
and the deodorizer distillate (DOD) of the vegetable oil industry. Phytosterols
resemble cholesterol in structure and differ only in the side chain position.
Phytosterols are known to reduce plasma total cholesterol (TC) and LDLcholesterol
level and also provide anti-inflammatory and anticancer effects.
