Additional Information: | Class IIa bacteriocins are apparently abundant antimicrobial peptides, which are highly effective in controlling the growth of microorganisms and attractive as food preservatives. Among this, Enterocin A produced by E.faecium was found to be a potential bacteriocin. It is a protein of molecular weight 4.8 kDa. Isolation of mutant from this strain helped to study about the genes involved in synthesis and regulation of bacteriocin. Production of bacteriocin was growth-phase dependent and is controlled by auto-induction pathway in which induction factor functions as the cell-density signal. Studies on this phenomena will further facilitate to identify the native bacteriocin isolates by quorum sensing mechanism. The gene may also encode the immunity factor of enterocin A, which confers self immunity against bacteriocins. E.feacium MTCC 5153 was also able to confer cross-immunity to other strains. Wild type and the Mutant strain was characterized using the novel 16S rRNA gene sequencing and its high degree of homology with wild type culture was observed. The need for expanded use of class IIa bacteriocins is obvious, especially in light of consumer demands for minimally processed , safe foods of adequate shelf life and convenience, and the global need for increasing the supply of food. Consequently class IIa bacteriocins are believed to be next in line if more bacteriocins are to be approved as food additives in future. |
