Additional Information: | Rice is used extensively as a staple food and rice bran a by-product obtained during milling is a rich source of proteins, lipids, vitamins and minerals. However, the use of rice bran as a food and feed is hampered by the off flavors and colors produced by the action of lipases present in the bran. Various stabilization techniques including both physical and chemical methods have been used to inactivate lipase with limited success. Better and efficient methods to control lipase activity in rice can be evolved based on studies of the structure function relationship at the molecular level. This lipase can be exploited for industrial,pharmaceutical and agrochemical applications. The major objective of this investigation was to establish the gene sequence of the Rice bran lipase. The deduced primary sequence and higher orders of structure would abet in evolving efficient methods to control the deleterious effects of this enzyme. The results would also establish the evolution/phylogeny of the lipases. The aim of the present investigation was therefore to clone and over-express the rice bran lipase and explore the possibilities of using this enzyme for future structural/ functional relationships and other relevant applications. |
