Abstract
The review is based on 51 references including 15 symposium proceedings and
3 books. The latest reference dates 1997. Number of hurdles like difficulty of
monitoring temperature of moving particles, difficulties in handling multiphase food
systems have been referred under sub-heads like introduction, engineering aspects,
quality aspects, packaging, filling equipments, validation process. Standards for
sterile air have been enumerated. Two workshops in November 95 and March 96 by
NCFST and CAPPS along with 11 Universities, 5 Govt. Agencies and 27 Food
Companies that arrived at a consensus to provide a guideline for validation process
to file aseptic process for multiphase foods has been given. The need for a batch
process and also mechanisation of aseptic packaging of foods related to patent
claims has been stressed.
