Additional Information: <p align="justify">In the present investigation, drum dried papaya-cereal flakes were developed by using drum-drying technique. The storage studies of the papaya flakes were carried out at varying temperatures such as 4°C, RT (room temperature) and 37°C for 60 days. The various parameters such as moisture, color (l a b values), acidity, non-enzymatic browning, ascorbic acid, total sugars, reducing sugars and total carotenoids, were analyzed at 20 days interval. The storage studies revealed that the papaya-cereal flakes stored at 4 °C had better quality in terms of color, taste and crispness and also the better retention of vitamins as compared to the flakes stored at RT (room temperature) and 37 oC. The shelf life of the papaya-cereal flakes was found to be 60 days at 4 °C temperature when it was packed in metallized polyester pouches and it could be more if packed in suitable packaging material. Today, the most popular area of processed food is ready to consume food sector where papaya-cereal flakes can niche market and it can also meet national and international export demand in the forthcoming future. The papaya-cereal flakes can be used as a ready to eat snack food. It can be easily reconstituted in hot milk to relish morning breakfast like any commercial cereal flakes. The papaya cereal flakes and powder can also be incorporated to bakery products or supplemented in infant cereals in order to have health imparting attributes. The papaya cereal flakes can also be used like any other cereal flakes, in porridge, a ready to eat snack or as base/thickener and flavoring material in ice cream preparations etc. Since, this product has an exotic fruit flavor and similar to the popular product like breakfast cereal flakes. The papaya powder obtained from drum drying can be used as for infant cereals, flavoring for beverages, ice-creams, jellies and other products due to high content of vitamins. The drum dried papaya-cereal flakes was hygroscopic in nature. Hence, it should be packed in suitable containers depending upon the market requirement and cost of production. Therefore, this process may become economical.</p>
