Additional Information: | The activity of amylase extracts on banana fruit at progressive stages of ripening and the presence of alpha and beta amylase activity and phosphorylase activity was investigated. The starches of banana fruits at progressive stages of ripening were analyzed using standard starch – iodine method which correlated well with the digital image processing using RGB method. The sugar in banana fruits at progressive stages of ripening were analyzed using standard DNS method which correlated well with the intensity image analysis using HSI method. A model system was established that utilized the entrapment of banana pulp homogenates with the sodium alginate matrix in the bead that is effective in assaying for enzyme activity in the pulp of the various stages of ripening in banana fruit. |
