Additional Information: Food packaging is one of the most important step in food processing to maintain the quality of food products for storage, transportation and end-use. Shrink packaging is an extension of controlled atmosphere or modified atmosphere (CA/MA) packaging. An important effect of shrink packaging is that the micro atmosphere around the food inside the package becomes water saturated and this is considered to be the controlling factor which delays the deterioration of food in shrink package. The water saturated atmosphere, however may enhance the microbial population in shrink packaged fresh produce. The moisture barrier properties up to certain extent of various flexible films create a high relative humidity within the gaseous micro-atmosphere at the surface of the wrapped produce. However, shrink packaging can be used as a means for producing an internal micro-atmosphere which can be enriched with a suitable volatile fungicide like Trichoderma viride and nitrogen fixing bacteria like Pseudomonas fluorescens so that the sealed enclosure forms a fumigation chamber to control decay over a prolonged period.
