Abstract

The TS %, refractometer solids ( degree Brix), total sugar %, water insoluble solids %, alcohol insoluble solids %, formol value, UV absorption characteristics and sediment volume of laboratory- and commercially-prepared samples of mango juice were determined, to evaluate their suitability for use as indices for determination of pulp content. Water insoluble solids % gave the most reliable results; a method for determination of pulp content from water-insoluble solids content is briefly described.
